I'll admit it - I'm a fairly simple cook, and this is the easiest but most delicious pumpkin soup I have ever tasted. I always use heirloom pumpkins grown right here in my own market garden - either Galeux D'Eysines or Rouge Vif D'Etampes, along with our own walking onions and herbs, for that nutrient dense hit which is well needed in the cooler months.
This is my own recipe, so the quantities are very "fluid" (a bit of this, and a dash of that...). Feel free to adapt it to your own taste. We garnish it with pea tendrils for added crunch. Divine!
